Last night, I had some dear friends over for dinner, these folk all LOVE LOVE LOVE to eat, drink and be merry. I knew that i wanted to make something that was delicious, hearty (to coat our boozy stomachs!) and low maintenance. We started off with roasted garlic, naan bread, goat cheese, sundried tomatoes and martini’s. The main event was chicken parm with fettucini alfredo and some delicious wines and we ended with mixed wild berry’s in maple syrup over vanilla frozen yogurt. All of these dishes were easy to prepare ahead of time thus allowing me time to socialize without spending too much time in the kitchen. Here is my version of the Chicken Parm with Fettucini Alfredo.
- 2 cups bread crumbs
- 31/2 cups fresh parmesan cheese
- 1 cup fresh basil chopped
- 1 tbsp parsley (dry)
- 2 eggs
- 1/2 cup of milk
- 1/2 cup and 1 tbsp of flour (put aside)
- 4 boneless skinless chicken breast
- 1/2 cup of butter
- 1 cup of cream
- 2 cans of tomatoes
- 1/2 cup of arugula
- 1 cup of baby spinach
- 1 glove of garlic
- 1/4 cup of olive oil
- 1/4 cup of balsamic vinegar
- 1/2 cup of aged cheddar
- 1 package fresh fettucini noodles
- salt and pepper to taste

A great evening with lot’s of laughter and love.
This is a perfect dish to make for a dinner party because you can coat and cover the chicken ahead of time and pop it into the oven about 30 minutes before you want to serve your meal. The alfredo sauce only takes about 10 minutes to make and the fresh pasta will cook within 3 minutes. Which means you only have to be in the kitchen for a minimal amount of time and you can spend the rest of the time hanging out with your guests.
