Homemade Holiday Irish Cream (WARNING: This recipe will change your life!)

I am not even going to get into the many reasons that I have neglected this blog and all my followers for so long…let’s just say that I’m back and ready to inspire, cook, drink and be merry.

Last night I got together with a couple of my gal pals to do make some goodies for Christmas. We each decided to make a liqueur to give away my choice was Homemade Irish Cream! Needless to say it turned out better than I imagined  and I PROMISE you that you will never ever buy pre bottled Irish Cream again!

Ingredients List: 

  • 1 cup 18% cream
  • 14 oz sweetened condensed milk (1can)
  • 1 2/3 C Jameson’s Irish Whiskey
  • 1 tsp instant coffee
  • 2 Tbsp Hershey’s chocolate syrup
  • 1 tsp vanilla
  • 1 tsp almond extract (I skipped this entirely)

The Steps:

  1. Combine all ingredients in a blender and set on high speed for 30 seconds.
  2. Bottle in a tightly sealed container and refrigerate. Shake before using

I Hate Christmas, Christmas Cookies-2011 styles

On December 11th, Foodventures turned 1 year old! Thanks to everyone for the support and for coming back time and time again to check out this blog. Anyway, one of my first post was I hate Christmas, Christmas Cookies and I figured I would do something similar this year. These are my favorite cookies ever. Enjoy!
Ingredients List:
  • 1 cup soft unsalted butter
  • 1 teaspoon vanilla
  • 1/2 cup icing sugar
  • 2 1/2 cups flour
  • 1/4 teaspoon salt
  • 3/4 cup of chopped candy canes
  • 3/4 cups chopped lindor white chocolate truffles
  • 3 pieces of bakers dark chocolate melted

i hate christmas-christmas cookies!

This year, i have the time and the lack of funds to make gifts for everyone on my list and so what better than the gift of cookies. Simple, delicious AND bonus: they make the house smell heavenly. I had a whole bunch of limes left over from my Holidays Soiree and so I thought that I would put them to use with this cookie recipe:

Ingredients List:

  • 1 cup unsalted butter-soft
  • 3/4 cup sugar
  • 3/4 cup brown sugar
  • 2 eggs
  • 1 tsp of Vanilla
  • the juice from 3 limes
  • 2 tbsps of lime zest
  • 2 1/2 cups all purpose flour
  • 1 tsp of baking soda
  • 1/4 tsp baking powder
  • 1/4 tsp salt
  • 1 bag of white chocolate chips

The result is light, fluffy and simple…*makes about 8 dozen small cookies

These cookies are very subtle and light tasting. It’s a little misleading (i mean a whole bag of white chocolate chips seems insanely sweet) but the lime juice cuts the sweetness of the white chocolate. If i decide to make more of these bad boys, i think i will add some dried cranberries to the mix.
