One Pot Pasta

I created this dish for dinner last night. It was an easy and tasty meal and quite healthy although it tasted very rich. I tried the yoke less egg noodles for the first time and they are delicious and a healthy pasta alternative. This dish is ready in less than 30 minutes and is probably one of the simplest thing I’ve made to date. Have it for dinner tonight!

Ingredients List:

  • 2 tbsp olive oil
  • 1 sweet onion sliced
  • 2 cups mushrooms sliced (i used a mixture of white sliced and portobello)
  • 1 lb  extra lean turkey
  • 1 large can diced tomatoes, drained
  • 1 jalapeño sliced
  • 1 cup red wine
  • 4 cups  chicken broth
  • 1 pkg  broad yokeless egg noodles
  • 1 container of Philadelphia Cooking Cream Cheese
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup  loosely chopped fresh basil

In a large pan add your olive oil and cook the onion, jalapeño and mushrooms on medium high heat until softened. Add the turkey and cook until browned and no liquid remains-about 5 minutes. Add tomatoes and wine cook for about 5 minutes. Add the broth and bring to a boil. Add the Pasta to the pot and cook (stirring occasionally) until pasta is al dente about 8 minutes. Add cream cheese,parm cheese and basil and stir into the mixture. Serve immediately.

Moroccan Stew

I am totally addicted to Hall’s Kitchen’s Moroccan Stew. Today instead of buying it at the local supermarket I decided to purge my cupboards and fridge to make my own version of this delicious Moroccan Stew. (The combo of spices is what makes this dish so killer!)

Ingredients List:

  • 1 tsp ground cinnamon
  • 1 tsp ground ginger
  • 1/2 tsp curry powder
  • 1/2 tsp nutmeg
  • 1/2 tsp sea salt
  • 1/4 tsp ground cumin
  • olive oil
  • 2 cups sweet onion and red onion combined chopped
  • 1 cup celery chopped
  • 2 cups finely shredded kale
  • 2 cups vegetable broth
  • 1 large sweet potato chopped
  • 1 cup chopped broccoli
  • 1 can diced tomatoes with spicy red peppers
  • 1 can black beans
  • 1 can mixed beans
  • 1 tbsp of chili flakes
  • 1/2 cup raisins
  • 1/2 cup unsalted peanuts

Thanks for your ongoing support and feedback and I am taking your advice as of right NOW! I am going to start publishing the recipe steps on the main page so that you don’t have to keep clicking back and forth between pictures every time you want to check out the next step in the recipe. You can still click on the pix for a quick reference if need be. Let me know how this new format works for you.
The Steps:
  1.  In a large pot add olive oil (about 2 turns round the pot) and cook onions and celery until tender and soft.
  2. In a bowl combine cinnamon, ginger, curry powder, nutmeg, cumin and salt. Mix well and set aside.
  3. Once your celery and onions are soft add kale and half of your spice mixture and mix into your pot. Once the kale has wilted add your vegetable broth and bring to a boil.
  4. Add beans, tomato, broccoli, sweet potato, raisins, peanuts and chili flakes to the pot and  boil until the sweet potatoes are soft.
  5. Cover and let simmer. The stew will thicken and the flavours will become more complex the longer you let it sit.
  6. Enjoy with rice, quinoa or as is. (also delicious with lamb and chicken!)

Not so Fried, Fried Chicken

For a light alternative to fried chicken try this fluffy, crunchy and mouthwateringly moist breaded chicken recipe. The panko crust imitates the crunchiness of fried chicken and the sour cream ensures the moistness without the fat and grease.  You can spruce this up and serve it anywhich way but i have just included my basic recipe.

Ingredients List:

  • 1/2 cup of flour
  • 1 cup of Panko Crumbs
  • 1  1/2tbsp of Sriracha
  • 1/2 cup of sour cream
  • 2 boneless chicken breast

There are so many alternatives to this recipe, it’s really a matter of what you like and what you have handy in your fridge. I often use light sour cream or plain yogurt as an even healthy alternative but you can easily substitute those options with mayo. As i mentioned in the photo blog, you can make this recipe without the fire of sriracha and it will be just as delicious. The panko crumbs are more or less flavourless but you could mix them with herbs, pepper, salt anything really before coating your chicken.

First Grill of the Season!

I love BBQing. It is my preferred method to cook food. I have to admit that I suck at cooking chicken on the BBQ, but I think this year will be the year that I will finally become a wizard at all things BBQ. A lot of women seem intimidated by the art of BBQ but hopefully my own silly bbq love will inspire everyone to grill grill grill. So here’s a teaser of what I cooked last night.

Tonight I am hosting a crew of people for a small evening of food and drink. Lot’s of fun food ideas are dancing around in my head and some of my fav cooks will be over. (Todd, JMurph, Kelly). MacCheesy

Basic, Delicious and a Great way to purge your fridge.

My friend JMurph came over for dinner this evening and I was too lazy to do any grocery shopping over the weekend. I figured that  I had enough stuff kicking around at home to make some sort of meal. Turns out, I have all the ingredients neccesary to make Mac and Cheese. In fact, I have so many ends of different kids of cheese that this is more like a 4 cheese mac and cheese.

Ingredients List:

  • 2 shallots (chopped)
  • 2 Tbsp of Butter
  • 2 Cups of Noodles (cooked)
  • 2 Cups of Cheese
  • 1 1/2 Cups of light cream  (5%)
  • 2 Tbsp of Flour
  • 1/2 Tbsp of Dijon
  • 2 Cups of Bread  crumbs
  • 3/4 cup of kielbasa
  • salt and pepper to taste

I dream of Mexico…

I recently booked a trip to Mexico City to spend a week with one of my oldest gal pals. I leave the first week of Feb and it won’t come soon enough. It is -15 degress in Toronto right now! (YUCK!) I realize that I am Canadian (and a Canadian from Northern Ontario nonetheless) but I cannot get used to this brutal weather!!!! Anyway, my friend Jen is coming over this evening for dinner and a catch up and so feeling inspired by my trip I decided to make something a little Mexican (Mexican Lasagna with Guacamole Rice) and a little Naughty. Perfect for girls night. Bring on the Tequila!

Ingredients List:

  • 1 package lean ground turkey
  • 1/3 cup of lime juice
  • 1 tbsp cumin
  • 1 tsp chili powder
  • 1 tsp cinnamon
  • handful of cilantro chopped
  • 1 small sweet onion chopped
  • 1 cup of corn
  • 1 cup of black beans
  • half a red pepper chopped
  • half a jalapeno pepper chopped
  • half a tomato chopped
  • 4 green onions chopped
  • 2 cups of shredded cheese (i used the taco/nacho shredded cheese mix)
  • 4 tbsp of salsa ( this is just a guideline)
  • 3 corn tortillas
  • handful of tortilla chips
  • 1 1-/2 cups cooked rice
  • 1 1-/2 ripe avacado’s
  • 1 cup packed fresh basil
  • 1/4 cup of lemon juice
  • 6 Tbsp olive oil
  • 2 Gloves of Garlic
  • 1 cup of water
  • 1 Tbsp of butter
  • salt and pepper to taste

Serves 4

The rice is intense and the sour cream adds the perfect flavour and creaminess to cut that intensity. Everything works really well with the Mexican Lasagna and it is a fun and very tasty dish!

Lucky Parm!

Last night, I had some dear friends over for dinner, these folk all LOVE LOVE LOVE to eat, drink and be merry.  I knew that i wanted to make something that was delicious, hearty (to coat our boozy stomachs!) and low maintenance. We started off with roasted garlic, naan bread, goat cheese, sundried tomatoes and martini’s. The main event was chicken parm with fettucini alfredo and some delicious wines and we ended with mixed wild berry’s in maple syrup over vanilla frozen yogurt. All of these dishes were easy  to prepare ahead of time thus allowing me time to socialize without spending too much time in the kitchen. Here is my version of the Chicken Parm with Fettucini Alfredo.


Ingredients List:

  • 2 cups bread crumbs
  • 31/2 cups fresh parmesan cheese
  • 1 cup fresh basil chopped
  • 1 tbsp parsley (dry)
  • 2 eggs
  • 1/2 cup of milk
  • 1/2 cup and 1 tbsp of flour (put aside)
  • 4 boneless skinless chicken breast
  • 1/2 cup of butter
  • 1 cup of cream
  • 2 cans of tomatoes
  • 1/2 cup of arugula
  • 1 cup of baby spinach
  • 1 glove of garlic
  • 1/4 cup of olive oil
  • 1/4 cup of balsamic vinegar
  • 1/2 cup of aged cheddar
  • 1 package fresh fettucini noodles
  • salt and pepper to taste

Serves 4

A great evening with lot’s of laughter and love.

This is a perfect dish to make for a dinner party because you can coat and cover the chicken ahead of time and pop it into the oven about 30 minutes before you want to serve your meal. The alfredo sauce only takes about 10 minutes to make and the fresh pasta will cook within 3 minutes. Which means you only have to be in the kitchen for a minimal amount of time and you can spend the rest of the time hanging out with your guests.  You should make this tonight, it’s easy and it’s tasty!
