Sausage and Roasted Tomato Penne in a Mustard Cream Sauce

I  recently enjoyed an amazing pasta at the Kit Kat Club that was served in a Mustard Cream Sauce. This sauce blew my mind and so I decided to re create it at home with my own Foodventure twist. The result is delicious and really simple. This dish takes about 10 minutes to make (minus the time to slow roast the tomatoes) and you won’t be disappointed.

Ingredients List:

  • 2 cups of slow roasted tomatoes (click here for a link to my recipe)
  • 4 shallots loosely chopped to roast with the tomatoes
  • 3 Italian sausages, meat removed from casings and crumbled (i used 2 hot and 1 mild)
  • 3/4 cup of dry white wine
  • 3/4 cup of 5% cream
  • 3 tablespoons of dijon mustard
  • 2 cups of penne
  • 1 1/2  cups of arugula
  • Freshly grated parmesan cheese to taste
  • Salt and Pepper to taste

Cook the pasta in a large pot of boiling salted water until al dente; drain. Meanwhile, heat the olive oil in a large, deep skillet. Add the sausage meat and brown over moderately high heat, about 5 minutes. Add the wine and simmer, scraping up the browned bits from the bottom, until reduced by half, about 5 minutes. Add the cream and mustard and simmer for 2 minutes. Remove the skillet from the heat, In a bowl combine  the pasta, roasted tomatoes and sausage. Toss to coat. Top with fresh arugula and fresh grated parm cheese. Serve at once.

Homemade Holiday Irish Cream (WARNING: This recipe will change your life!)

I am not even going to get into the many reasons that I have neglected this blog and all my followers for so long…let’s just say that I’m back and ready to inspire, cook, drink and be merry.

Last night I got together with a couple of my gal pals to do make some goodies for Christmas. We each decided to make a liqueur to give away my choice was Homemade Irish Cream! Needless to say it turned out better than I imagined  and I PROMISE you that you will never ever buy pre bottled Irish Cream again!

Ingredients List: 

  • 1 cup 18% cream
  • 14 oz sweetened condensed milk (1can)
  • 1 2/3 C Jameson’s Irish Whiskey
  • 1 tsp instant coffee
  • 2 Tbsp Hershey’s chocolate syrup
  • 1 tsp vanilla
  • 1 tsp almond extract (I skipped this entirely)

The Steps:

  1. Combine all ingredients in a blender and set on high speed for 30 seconds.
  2. Bottle in a tightly sealed container and refrigerate. Shake before using

BBQ Mushrooms stuffed with Blue Cheese

It’s BBQ season! My favorite season and last night I had some gal pals over for some food and drinks. My friend Katy brought over the fixings for this delicious appetizer. It was the perfect starter for our steak dinner and a total crowd pleaser.

Ingredients List: 

  • 1 package of whole mushrooms
  • 1/3 cup of blue cheese
  • 1/4 cup of plain cream cheese cheese
  • 1 shallot
  • 1 glove of garlic
  • 1 tsp of butter

The Steps:

  1. Pre-heat your bbq and set the temperature on low. Clean the mushrooms and remove the stems (but save them for step 2!). Set the mushrooms aside and Melt the butter in a small frying pan over med high heat.
  2. Chop your mushrooms stems, shallot and garlic into small piece. Add your chopped veggies to your pan with the melted butter and saute until soft; about 5 minutes.
  3. While your veggies are sauteing: In a bowl combine the blue cheese and cream cheese and mix until soft and creamy. Once your veggies are ready add the hot mixture to your cheese and mix well.
  4. Spoon the mixture into the mushroom caps filling generously.
  5. Place the stuffed mushrooms on the hot grill and cook until the cheese in golden brown and the mushrooms are soft and cook throughout (about 15 minutes or so).

5-3-1-1

THIS RECIPE WILL CHANGE YOUR LIFE!

My culinary guide Todd introduced me to the 5-3-1-1. You can use this recipe to make pizza dough/flat bread/baguettes/calzones etc…It’s a very low maintenance recipe and you can add anything to it…all you need is a few simple ingredients, your hands and an hour’s worth of patience.

Ingredients List:

  • 5 cups of flour
  • 3 cups of water
  • 1 tbsp of yeast
  • 1 tbsp of salt
  • This recipe will make about 3 servings worth of dough. It will keep in your fridge for up to a week.

I realize that it’s been a while since i have posted anything. I hope that you haven’t starved…. Things have been a little insane with the production I’m on. But I celebrated the show’s Press night last evening and it was a HUGE success. I am now out of lockdown and I promise a lot of fun foodventures are coming your way!

BTW if you don’t own a pizza stone go out and buy one TODAY. You can get them anywhere. I bought mine at Home Sense for 10 dollars. It will make the 5-3-1-1 that much better!

The Secret Garden….

Ok. Here’s the deal…

There is nothing secret happening here BUT a couple of great friends working on The Secret Garden came over for dinner this evening between shows…. In January, I purchased the  pasta attachment for my kitchenaid mixer and tonight was the perfect night to try it out! I made spaghetti with a sausage and pancetta tomato sauce and a gorgonzola and garlic flatbread.

This post will only show y’all how to make homemade pasta but every part of this meal was created from scratch. It took me a few tries to master the pasta, Let me tell ya…it was much harder than you think  to get to this point…(hopefully this will allow you not to go through the same trial and error!) Thanks to Todd for his ongoing advice and his free pouring…(that kept the project going!) Know that this is the edited version of the pasta making (although a series of shots of the dough issues might be fun!)…hopefully you will get a winning recipe from the getGo!

Ingredients List:

  • 3 1/2 cups of flour
  • 4 eggs
  • 1 tbsp water
  • 1/2 tbsp of salt

Nothing is more exciting than enjoying a meal with great friends.

I realize that not everyone has access to a kitchenaid mixer and the truth is that to make delicious homemade pasta you don’t need fancy gadgets.  Making pasta at home is cheap, easy and delicious (in fact next time i will try it without the gadget). So make it now. Stop buying it. Seriously, even if you don’t have a mixer just make it on your counter! Go and youtube how to make homemade pasta…so worth it and  cheap to do.

I can’t to hear about your pasta making stories!

Hail Caesar!

Brunch Potluck idea: Caesars…

This morning, I crashed a brunch potluck at the artscape lofts in the west end. The spirit of the afternoon was incredible and I had the chance to meet some cool people.

Brunch Potluck???? I was stumped about what to bring (breakfast is not my forte): and then VOILA vodka saves the day…again.

Seriously though the Caesar is a Classic Canadian Cocktail and the perfect addition to brunch. I mean who doesn’t love the caesar? Well lot’s of people…you either love it or hate it.

Traditionally the drink is garnished with a lime wedge and a celery stick BUT this being a Foodventure I decided to get creative and make a few different types of garnishes.

I made 3 combo’s:

  • Spicy shrimp, Jalepeno, Celery
  • Grape tomato, Baby Spinach, Chorizo Sausage
  • Pickled Pearl Onion, Beet, Cucumber

Finally:

How to make a Caesar! ( people love to make variations of this cocktail ***including myself*** but this is a classic caesar recipe)

  1. Take your cocktail tumbler and dip it in lemon juice.
  2. Take you celery salt and rim your glass with the salt (the lemon juice will make the salt stick to the rim of the glass)
  3. Add ice with a spoon
  4. Add 1.5 oz of Vodka
  5. Add 1 dash of Tabasco
  6. Add 2 dashes of Worcestershire sauce
  7. Add Clamato Juice
  8. Garnish with Celery Stick and Lime Wedge
  9. DRINK!

Some cool additions/variations:

  • You can never have too much Worcestershire sauce.
  • Add a dash of lemon juice to the drink
  • Add some salt and pepper
  • Add some freshly grated horseradish or wasabi.
  • My sister loves to add pickle juice (weird) but a pickle is a delicious garnish for the caesar.
  • A spicy bean is my favorite garnish.

It’s okay to drink in the morning if it’s a caesar but just remember to daytime pour and not nighttime pour! Try one tomorrow morning. Speaking of tomorrow, I am doing another brunch like activity but this time it’s mimosa’s and oysters. Lucky Parm!

Last night, I had some dear friends over for dinner, these folk all LOVE LOVE LOVE to eat, drink and be merry.  I knew that i wanted to make something that was delicious, hearty (to coat our boozy stomachs!) and low maintenance. We started off with roasted garlic, naan bread, goat cheese, sundried tomatoes and martini’s. The main event was chicken parm with fettucini alfredo and some delicious wines and we ended with mixed wild berry’s in maple syrup over vanilla frozen yogurt. All of these dishes were easy  to prepare ahead of time thus allowing me time to socialize without spending too much time in the kitchen. Here is my version of the Chicken Parm with Fettucini Alfredo.


Ingredients List:

  • 2 cups bread crumbs
  • 31/2 cups fresh parmesan cheese
  • 1 cup fresh basil chopped
  • 1 tbsp parsley (dry)
  • 2 eggs
  • 1/2 cup of milk
  • 1/2 cup and 1 tbsp of flour (put aside)
  • 4 boneless skinless chicken breast
  • 1/2 cup of butter
  • 1 cup of cream
  • 2 cans of tomatoes
  • 1/2 cup of arugula
  • 1 cup of baby spinach
  • 1 glove of garlic
  • 1/4 cup of olive oil
  • 1/4 cup of balsamic vinegar
  • 1/2 cup of aged cheddar
  • 1 package fresh fettucini noodles
  • salt and pepper to taste

Serves 4

A great evening with lot’s of laughter and love.

This is a perfect dish to make for a dinner party because you can coat and cover the chicken ahead of time and pop it into the oven about 30 minutes before you want to serve your meal. The alfredo sauce only takes about 10 minutes to make and the fresh pasta will cook within 3 minutes. Which means you only have to be in the kitchen for a minimal amount of time and you can spend the rest of the time hanging out with your guests.  You should make this tonight, it’s easy and it’s tasty!
