Foodie Penpals-Reveal Day!

I was surfing the internet and came across this website. I was so intrigued with the idea that I immediately signed up. April was my first month as a participant and it was really exciting. I sent a box to Hornepayne Ontario and although it was from a different person I also received one from Hornepayne which was a cool coincidence. My box arrived a couple of days after the 15th (which is send out day) and was filled with some delicious goodies! I still have some goodies left to try but I am still dreaming about Milk Chocolate with Toffee and Sea Salt which i devoured in like 3 minutes! I also really enjoyed the 5 seed crackers! Homemade Holiday Irish Cream (WARNING: This recipe will change your life!)

I am not even going to get into the many reasons that I have neglected this blog and all my followers for so long…let’s just say that I’m back and ready to inspire, cook, drink and be merry.

Last night I got together with a couple of my gal pals to do make some goodies for Christmas. We each decided to make a liqueur to give away my choice was Homemade Irish Cream! Needless to say it turned out better than I imagined  and I PROMISE you that you will never ever buy pre bottled Irish Cream again!

Ingredients List: 

  • 1 cup 18% cream
  • 14 oz sweetened condensed milk (1can)
  • 1 2/3 C Jameson’s Irish Whiskey
  • 1 tsp instant coffee
  • 2 Tbsp Hershey’s chocolate syrup
  • 1 tsp vanilla
  • 1 tsp almond extract (I skipped this entirely)

The Steps:

  1. Combine all ingredients in a blender and set on high speed for 30 seconds.
  2. Bottle in a tightly sealed container and refrigerate. Shake before using

Choco-Pumpkin Cookies

Ingredients List:

  • 2 Cups Flour
  • 1 Tsp baking Powder
  • 1 Tsp Baking Soda
  • 1 Tsp All spice
  • 1 Tsp Cinnamon
  • 1/2 Tsp Salt
  • 1 1/4 Cup Sugar
  • 2 Eggs
  • 1/2 Cup Sunflower Oil
  • 1 Tsp Vanilla
  • 1 Can Punpkin Puree
  • 1 Cup Chocolate  Chips

Workaholic Cookies…

I recently started a new job, after months of living a life of leisure. Monday is my day off and generally, I like to spend that day running errands, doing chores around the house, enjoying a home cooked meal, hanging with friends and baking. This week is going to be insane since we start teching the show but I figured it would be yummy for my colleagues to start the week off with some delicious cookies. Besides it’s an extra bonus for me because spending time in the kitchen is really relaxing  and a great way to unwind (and it also allows me to justify not doing “other” chores!)

Ingredients List:

  • 3/4 cup butter, softened
  • 1 1/2 cups white sugar
  • 2 eggs
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 2/3 cup cocoa powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3/4 cup of Lindor Milk Chocolate pieces
  • 1/2 cup Lindor  Dark Chocolate pieces

I hope my colleagues at work enjoy these bad boys! The thing about these cookies are that they actually taste like brownies! Perfect!

i hate christmas-christmas cookies!

This year, i have the time and the lack of funds to make gifts for everyone on my list and so what better than the gift of cookies. Simple, delicious AND bonus: they make the house smell heavenly. I had a whole bunch of limes left over from my Holidays Soiree and so I thought that I would put them to use with this cookie recipe:

Ingredients List:

  • 1 cup unsalted butter-soft
  • 3/4 cup sugar
  • 3/4 cup brown sugar
  • 2 eggs
  • 1 tsp of Vanilla
  • the juice from 3 limes
  • 2 tbsps of lime zest
  • 2 1/2 cups all purpose flour
  • 1 tsp of baking soda
  • 1/4 tsp baking powder
  • 1/4 tsp salt
  • 1 bag of white chocolate chips

The result is light, fluffy and simple…*makes about 8 dozen small cookies

These cookies are very subtle and light tasting. It’s a little misleading (i mean a whole bag of white chocolate chips seems insanely sweet) but the lime juice cuts the sweetness of the white chocolate. If i decide to make more of these bad boys, i think i will add some dried cranberries to the mix.

Trailer Trash Truffles

I’m hosting my annual Christmas Party and figured it would be fun to make a special treat for all the guests to take home. Not being much of a baker, I found an easy and minimalist recipe that I thought would look good and taste incredible.

It only calls for 4 simple ingredients:

  • 1 bag of Oreo Cookies
  • 1 Package of Cream Cheese
  • 1 Box of semisweet chocolate squares
  • 1 package of white chocolate chips

The results are interesting…

The process was a little more complicated that I thought it would be and very messy!

The end result was disappointing but what did I expect with Oreo Cookies, Cream Cheese and Semi Sweet Chocolate. Not to knock on Oreo cookies- I mean the truffles actually taste OK. In my mind i pictured something a lot different… more elegant and incroyable!

In the end, I won’t be handing these out as party favors. I don’t think i want people to remember the great night they had with some mediocre artificial tasting treat. In fact, simple shortbread cookies would have been tastier and more elegant. Instead, these will be put out for everyone to enjoy as they raise a glass or two or five. (that reminds me i need to figure out my signature holiday cocktail…)

And so off i go to putter in the kitchen and get some more food ready for the party.

The main event: Do it your self pulled pork sliders! (who doesn’t love pulled pork?)
